The easiest to fly (or
hover is most like it) are the coaxial type design. These have two
rotors that spin opposite to each other. These will usually fly up and
down, easily rotate to left or right, but slow in moving forward or
backward. Designed for beginners.
The fixed pitch are more
advanced, though still easy to fly. Looks more realistic.
As for the channels,
basically a 2-channel helicopter is simpler to control than a 4-channel
helicopter.
